Lars: One of the things we do not need to miss from Finland is pancakes. Every culture seems to have its own slight variation of them, and obviously we are very fond of the Finnish ones, called lettu.

We can easily make them ourselves. Excellent with jam and/or whipped cream. Or crushed berries.

  • 2 or 3 eggs (depending on size)
  • 200-300 ml flour
  • 500 ml milk

Mix eggs and milk, then add flour. Let rise for an hour in room temperature. Use a warm to hot pan, plenty of oil or butter, and a thin spatula.

Best eaten on a lazy Sunday, or at a summer cottage.

I might note that making pancakes should not be done with utensils prone to melting.
